Attempting Healthy Eating
Man eating healthy can be so hard! One of my biggest struggles is eating different than my family. If I am really motivated it's not hard to eat different foods, but I struggle with prep for essentially two different meals. I don't want my Littles to eat low carb diets. And heaven knows we would go broke feeding my man if we didn't have carbs on his plate. So this week I have been trying to come up with a way to alter their meal to make it work for me. Our first night I made gluten free Penne Noodles (the Barilla brand in the blue box are THE best). An Alfredo pesto sauce (sounds fancy, but it is in a jar). Some parmesan cheese. And some breaded eggplant cutlets (again this sounds fancy, but they are a few dollars a box a Trader Joe's!). For my portion of dinner I made a spaghetti squash. Super easy to make!
