Attempting Healthy Eating

Man eating healthy can be so hard! One of my biggest struggles is eating different than my family.

If I am really motivated it's not hard to eat different foods, but I struggle with prep for essentially two different meals. I don't want my Littles to eat low carb diets. And heaven knows we would go broke feeding my man if we didn't have carbs on his plate.

So this week I have been trying to come up with a way to alter their meal to make it work for me.

Our first night I made gluten free Penne Noodles (the Barilla brand in the blue box are THE best). An Alfredo pesto sauce (sounds fancy, but it is in a jar). Some parmesan cheese. And some breaded eggplant cutlets (again this sounds fancy, but they are a few dollars a box a Trader Joe's!). 
For my portion of dinner I made a spaghetti squash. Super easy to make!  I cut it length wise (which honestly was the most difficult part, make sure you have a sharp knife). Rubbed it with some olive oil and put cut side down on a baking sheet in a 400 degree oven for 50 minutes.

This gave me plenty of time to cook the pasta. After the pasta was done I put in the eggplant and cooked them with the squash.

Once the squash was done I used a fork to scoop it out (making it look like spaghetti).  Topped the squash and pasta with sauce and cheese and served with the eggplant. The squash made a TON so I had lunch the next couple of days!

Second night I had planned to make a Shepherds Pie. I decided to stop by Trader Joe's and grab a bag of cauliflower rice (I'm sure it's not hard to make your own, but I dont have time for that). Since my hubby isn't fond of mashed potatoes I cut some red potatoes into little 1/2 inch-ish cubes (normally I would cut them bigger but I was making dinner last minute and wanted the potatoes to cook faster).  I rubbed them with some olive oil and put them in my round stone baker from Pampered Chef.
While those cooked on 475, I browned the hamburger and cooked some onions. When the meat was done the potatoes were nice and cooked. I put 3/4 of the meat on top of the potatoes and topped with a can and a half of green beans and some cheese. Then I put them back in the oven.
I had cooked the meat in my cast-iron skillet so I put the rest of the meat in a small bowl, rinsed my skillet and added some butter (I added about three tbs, but I like butter). I added in enough of the cauliflower rice to cover the bottom and cooked till it browned up a bit.
Once the cauliflower was done I spread it out in the pan topped with the meat, onions, green beans, and LOTS of cheese. I continued cooking until the cheese had melted.
By this time the other shepherds pie was done :)  Perfect timing again!!
To be honest hubby liked the way mine looked better, but still preferred his potatoes.

Night Three I have a big crock pot of carrots, onion, celery, a shredded rotisserie chicken from the store (because who really has time to cook chicken), and lots of chicken broth. I put all this in about 4pm and I am hopeful the carrots will be cooked by 7...maybe it's wishful thinking lol.

I am going to make some more penne for the family to pour their soup over. As for me I will either eat it like it is or with a lille cauliflower rice.

Hopefully I can keep coming up with dual meals that are along the same lines and don't take me much extra time or prep.
